The Ultimate Summer Grilled Peach and Burrata Salad Recipe
Summer is here and it's the perfect time to take advantage of fresh, seasonal produce. One of my favorite ingredients to incorporate into my recipes during this time of year is ripe, juicy peaches. And what better way to enjoy them than on the grill? This Grilled Peach and Burrata Salad is a crowd-pleasing dish that is not only visually stunning, but also bursting with flavor. Trust me, it will be the star of your next summer barbecue or dinner party.
Ingredients:
- 4 ripe peaches, halved and pitted
- 8 oz burrata cheese
- 4 cups arugula
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1/2 cup chopped pistachios
- 1/4 cup olive oil
- Salt and pepper
Instructions:
- In a small saucepan, heat the balsamic vinegar and honey over medium heat until it starts to simmer. Lower the heat and let it reduce for about 5-7 minutes until it thickens into a glaze. Set aside to cool.
- Preheat your grill to medium-high heat. Brush the peach halves with olive oil and sprinkle with a pinch of salt and black pepper on both sides. Grill the peaches for about 3-4 minutes on each side until grill marks appear and they start to soften.
- In a large bowl, mix together the arugula, chopped pistachios, and a pinch of salt and pepper.
- On a large serving platter, arrange the grilled peaches on top of the arugula mixture. Add spoonfuls of burrata cheese on top of the peaches.
- Drizzle the balsamic glaze over the salad and serve immediately.
- Enjoy your delicious and refreshing Grilled Peach and Burrata Salad!
The combination of sweet, smoky grilled peaches with creamy burrata and peppery arugula is simply irresistible. And the homemade balsamic glaze brings a tangy and slightly sweet element to tie it all together. This salad is perfect as a light summer meal or as a side dish to accompany your favorite grilled meats.
Not only is this recipe easy to make, but it also allows for some customization to suit your taste preferences. You can add some prosciutto or grilled chicken for added protein. Or swap out the arugula for baby spinach or mixed greens. The possibilities are endless!
So next time you have a bunch of ripe peaches sitting in your kitchen, whip up this Grilled Peach and Burrata Salad and treat your taste buds to a burst of summer flavors. Trust me, your friends and family will thank you for it!
