The Perfect Fall Recipe: Butternut Squash Risotto

Ingredients:
- 1 medium-sized butternut squash
- 1 onion, finely diced
- 2 cloves of garlic, minced
- 1 cup Arborio rice
- 4 cups vegetable broth
- 1/2 cup white wine (optional)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley or sage for garnish
Instructions:
- Peel and dice the butternut squash into small cubes. Place them on a baking sheet and drizzle with olive oil and a pinch of salt and pepper. Roast at 400°F for 20 minutes, flipping occasionally, until tender and lightly browned.
- In a separate pot, heat the vegetable broth until it comes to a low boil, then reduce the heat to a simmer.
- In a large pan, heat the butter and olive oil over medium heat. Add the onion and garlic and sauté until translucent, about 3 minutes.
- Add the Arborio rice to the pan and stir until it is evenly coated with the butter and oil. Toast for 2-3 minutes, stirring occasionally, until the edges of the rice become translucent.
- If using, pour the white wine over the rice and stir until it is fully absorbed.
- Begin adding the vegetable broth, 1 cup at a time, stirring continuously and allowing the liquid to be absorbed before adding more. This should take about 20 minutes.
- Once the rice is al dente and the broth has been absorbed, stir in the roasted butternut squash and Parmesan cheese. Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with chopped fresh parsley or sage for an extra burst of fall flavor.
