Ingredients:

  • 1 head of cauliflower
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn, drained and rinsed
  • 1 avocado, diced
  • Fresh cilantro, chopped
  • Lime wedges for serving

Instructions:

  1. Remove the leaves and core from the cauliflower head. Cut the cauliflower into florets and then pulse in a food processor until it resembles rice. You may need to do this in batches depending on the size of your food processor. Set aside the "cauliflower rice".
  2. In a large skillet, heat the olive oil over medium-high heat. Add the diced onion, red bell pepper, jalapeño, and garlic. Sauté for a few minutes until the vegetables are softened.
  3. Add the cauliflower rice to the skillet and cook for about 5 minutes until it begins to soften.
  4. Stir in the ground cumin, chili powder, smoked paprika, salt, and black pepper. Cook for an additional 2-3 minutes.
  5. Add the black beans and corn to the skillet and cook for another 2-3 minutes until heated through.
  6. Serve the Spicy Mexican Cauliflower "Rice" Bowl in bowls and top with diced avocado and cilantro. Squeeze lime juice over each bowl before serving.

This recipe is a great way to use up any leftover vegetables you have in your fridge. You can easily swap out the black beans and corn for other protein sources like chicken, shrimp, or tofu. And of course, feel free to adjust the level of spice by adding more or less jalapeño peppers or chili powder. The possibilities are endless with this flavorful dish.

Not only is this dish low-carb, but it's also loaded with nutrients. Cauliflower is high in vitamins and minerals, and it's a great source of dietary fiber.
