Ingredients:

  • 12 ounces of your favorite pasta (penne or fusilli work well)
  • 1 tablespoon of olive oil
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 1 28-ounce can of crushed tomatoes
  • 1/2 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Handful of fresh basil leaves, chopped

Instructions:

  • In a pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add in the diced onion and cook until softened, about 5 minutes. Add in the minced garlic and cook for an additional 2 minutes.
  • Pour in the crushed tomatoes and stir to combine with the onion and garlic. Let it simmer for about 5 minutes, stirring occasionally.
  • Stir in the heavy cream and let it cook for an additional 2-3 minutes, until the sauce thickens slightly.
  • Remove the skillet from the heat and stir in the grated Parmesan cheese until melted and well combined.
  • Season with salt and pepper to taste.
  • Add in the cooked pasta and chopped fresh basil to the skillet and toss to coat the pasta in the tomato sauce.
  • Garnish with additional Parmesan cheese and basil, if desired.
