Delicious and Easy Chimichangas with a Twist
One of my all-time favorite dishes to make is chimichangas. They are crispy, flavorful, and can be filled with just about anything you want. But I recently stumbled upon a unique twist on this classic recipe that has become a staple in my household. These delicious and easy chimichangas are filled with a mouthwatering blend of green chilies, jalapenos, and cream cheese. Trust me, you'll want to try this recipe out ASAP.
Ingredients:
- 2 cups shredded cooked chicken
- 1 can diced green chilies
- 1 jalapeno, seeded and diced
- 4 ounces cream cheese, softened
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 8 flour tortillas
- Oil for frying
Instructions:
- In a large bowl, mix together the shredded chicken, green chilies, jalapeno, cream cheese, cilantro, cumin, and garlic powder. Season with salt and pepper to taste.
- Spoon about 1/4 cup of the mixture onto each tortilla and roll tightly. Secure with toothpicks.
- In a large skillet, heat about 1 inch of oil over medium-high heat.
- Carefully place the chimichangas, seam side down, into the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove chimichangas from the oil and place on a paper towel-lined plate to drain excess oil.
- Remove toothpicks and serve with your favorite toppings, such as salsa, sour cream, or guacamole!
These chimichangas are perfect for a quick and easy weeknight dinner, but they're also a great party appetizer for a crowd. And if you want to spice things up even more, you can add some diced jalapenos to the filling mixture for an extra kick.
