Crispy Tofu and Vegetable Stir-Fry Recipe

Ingredients:
- Firm tofu

- Olive oil
- Soy sauce
- Garlic powder
- Ginger powder
- Cornstarch
- White rice
Instructions:
- Start by draining the tofu and pressing out any excess water. Slice the tofu into cubes and set aside.
- In a separate bowl, mix together 1 tablespoon of cornstarch, 1 tablespoon of soy sauce, ½ teaspoon of garlic powder, and ½ teaspoon of ginger powder.
- In a pan, heat up a tablespoon of olive oil and add in the tofu cubes. Cook until crisp and golden brown.
- Remove the tofu from the pan and set aside.
- In the same pan, add in your chopped assorted vegetables. Cook until tender.
- Once the vegetables are cooked, add the crispy tofu back into the pan.
- In a separate bowl, mix together 1 tablespoon of cornstarch and 1/4 cup of soy sauce. Pour this mixture over the tofu and vegetables in the pan.
- Stir everything together and cook for an additional 2-3 minutes until the sauce thickens.
