Easy and Delicious Teriyaki Chickpea Stir Fry Recipe

Everyone loves a good stir fry! It's quick, easy, and full of flavor. But sometimes, traditional stir fry with meat can feel a bit heavy. That's why I decided to create a unique and vegetarian stir fry recipe that will have your taste buds dancing. Introducing the Teriyaki Chickpea Stir Fry!

Ingredients:

  • 1 can (15oz) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1 cup snow peas
  • 3 cloves of garlic, minced
  • 1 tsp ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Sesame seeds and green onions for garnish (optional)

Instructions:

  • In a small bowl, mix together soy sauce, honey, rice vinegar, sesame oil, and a dash of salt and pepper. Set aside.
  • In a large skillet or wok, heat up olive oil over medium-high heat. Add diced onion, minced garlic, and ginger. Cook until onions become translucent, about 2-3 minutes.
  • Add in sliced bell peppers, broccoli florets, and snow peas. Stir and cook for about 5 minutes, until vegetables become tender but still crisp.
  • Next, add in the drained and rinsed chickpeas to the skillet. Stir and cook for another 2-3 minutes.
  • Pour the teriyaki sauce over the vegetables and chickpeas. Stir and cook for an additional 2 minutes, until all ingredients are coated in the sauce and heated through.
  • Remove from heat and serve hot over rice or noodles. Garnish with sesame seeds and green onions, if desired.
